SAUTÉED CLAMS WITH CURRY SAUCE AND ARTICHOKES
This dish is somewhat labor-intensive, but it’s well worth the effort. You can also make this without the artichokes and just serve plain or over white rice if you want to save time.
SERVES 4 AS AN ENTRÉE OR 6 AS AN APPETIZER
Juice of 1 lemon
3 to 4 artichokes (about 2 pounds)
3 tablespoons vegetable oil
1 medium onion, finely chopped
1 tablespoon curry powder
1 ounce dried shiitake mushrooms, rehydrated in warm water and finely chopped
1 cups chicken stock
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
3 tablespoons unsalted butter
2 tablespoons fish sauce
1 teaspoon cornstarch dissolved in 1 cup water
4 pounds Manila clams
2 shallots, minced
½ cup dry white wine
2 teaspoons tamarind paste
4 scallions, minced
